The publication of this year’s 2024 edition of Tisjir mill-Qalb presents a series of recipes that promote the concept of sustainability in cooking. This is a principle that has long been practiced in traditional Maltese kitchens: wholesome food, prepared from fresh local ingredients, with a mindful use of every product, minimising waste as much as possible.
The kitchen remains the heart of our homes – bustling with activity, while the pot simmers and the food bakes in the oven, filling our senses with its aroma.
Today’s fast-paced life easily distracts us, and sometimes leads us to make choices that are not necessarily sustainable, both financially and in terms of the natural environment. When we cook at home, we can make more sustainable choices – from how we shop by selecting local products, buying wisely, and also recognising how to reduce waste in cooking.
